WINEMAKING

Entirely from the Highbow Hill vineyard in the Lower Yarra at Yarra Glen. Handpicked fruit was chilled overnight before being whole bunch pressed to a mix of barrique and puncheon. The wine undergoes indigenous fermentation and partial malolactic fermentation before 10 months maturation in French oak.
