Description

A wine shaped by place. Grown on the sedimentary soils of Highbow Hill, this pinot noir carries the structure and minerality of the site through to the glass.

Perfumed rose petal and ripe black cherry aromas frame savoury spice and mineral notes. The palate is rich and structured, with dusty tannins reflecting the local sedimentary soils.

Pairs beautifully with slow-cooked lamb, duck, hearty beef stew, or earthy mushroom dishes.

VINIFICATION

Wet, cool conditions persisted. From Highbow Hill, a mix of pre-phylloxera and newer blocks were fermented separately with 0–25% whole bunch, then aged in French oak (barriques and puncheons; one-third new) for 11 months.
