VINIFICATION

The fruit was handpicked in early March from our two vineyards in the Yarra Valley, Wombat Creek and Highbow Hill. It was destemmed then fermented in open fermenters with hand plunging and pumping over. The wine was matured for 10 months in a mix of old and new French oak barrels.

AROMA & PALATE

Wild strawberry and mixed cherries on the nose, with anise and cinnamon. The palate reflects the parentage of each of the sites – weight, texture and black fruits from our Highbow Hill site, and juicy layers of fruit paired with a discrete acid and fine boned structure from the Wombat Creek portion.
