Cabernet Merlot

CRAFTING & AGEING

Fruit harvested separately from our Highbow Hill Vineyard (lower Yarra Valley), in late March to early April. After a 4-day cold soak, parcels were fermented in open-top stainless fermenters and plunged by hand once to twice daily - with some extended maceration. Post-press, wines were racked to 225L French oak barriques, 1/3 new oak was used. 

AROMA & PALATE

Accentuating elegance and structure, this wine is a medium-bodied expression of cool-climate Cabernet Sauvignon and Merlot. The nose shows off aromas of dried herbs, cassis and fresh blackberries. The palate is bright with good fruit concentration, hints of violet and a savoury backbone. The tannins are fine and focussed with great length and persistence.
