WINEMAKING

Sitting at 420 metres elevation near Gladysdale, Wombat Creek is a unique Upper Yarra Valley cool climate vineyard. Hand picked fruit was whole bunch pressed to a mix of new and seasoned French oak for wild fermentation, followed by partial malolactic ferment and 10 months maturation.
