TASTING NOTES
This is a full-bodied, rich wine with powerful aromas of red berries, earthy complexity and hints of spice and blackcurrant. The palate has plenty of ripe berry fruits and spice as well as earthy depth and beautifully balanced tannins. It will age superbly. Drink with rare Victorian Wagyu beef.
SEASON
There was good winter rainfall in 2012 creating excellent soil moisture. Early heat in spring and a warm dry summer led to an early harvest, but cool conditions in autumn allowed optimal ripeness in Cabernet Sauvignon fruit.
WINEMAKING
This fruit was handpicked in mid-March; the wine was matured for 15 months in French oak barriques, approximately one third new.
One of Australia’s premier cool climate wine regions, the Yarra Valley encompasses such diverse topography that it can produce premium quality fruit in a range of grape varieties.
With its stunning hills and dales ranged before a backdrop of blue mountains, elevations vary greatly. The climate is Mediterranean with a maritime influence from Port Phillips.
