Easter wine and seafood pairings

Having a stay-cation this Easter? Feeling more shellfish? We’ve compiled our favourite seafood dishes matched with wines, so you can enjoy the last mini-break before the autumn/winter season. All whites go with fish, right? Not exactly...

Salt and Pepper Squid and Clare Valley Riesling

Dan Hong says that Salt and Pepper Squid is the quintessential Aussie dish - "It's just everywhere. Everyone loves it and if it's on a menu, everyone orders it."

It’s hard to pass up this delectable treat, especially when done well with fresh squid and subtle spices. Riesling is a super versatile food wine, as the acidity and freshness means it match up to spicy flavours. The dry, citrus and mineral style of Clare Riesling makes it a fan favourite of wine nerds across the world.

reshly peeled prawns and Sauvignon Blanc -Semillon

Our winemakers do love their food and strongly believe, like grape growing, starting with good produce is essential. Here they stress that these prawns will taste better freshly peeled. If you have children, you can always outsource this job to them. These prawns are best unadulterated with sauces and on their own, and you can’t surpass this dish as an Australian favourite. We recommend you match this with a zingy, fruity and fresh Sauvignon Blanc Semillon, preferably grown in a coastal region like Margaret River, and enjoy by the beach.

Salmon and Romance Was Born Rosé

Smoked, cured, BBQ-ed or sashimi. Whichever way you like it – salmon is delicious and good for you. The creamy texture of the salmon will pair well with a savoury Rosé or even a lighter red such as Pinot Noir. If you are looking at splashing out (excuse the pun), try our single vineyard Capella Pinot Noir - winemaker’s choice!

Natural Oysters and Trial Batch Vermentino

Oysters are one of those delicacies that can take a little time to become accustomed to, but once you get there, they are one of life’s greatest food pleasures. Especially because oysters and wine are no doubt a match made in heaven. Serving natural oysters allows them to shine, with just a squeeze of lemon juice to lift the freshness. Add thin slices of lemon to garnish, and serve on a bed of rock salt. Natural oysters pair deliciously with a fresh and crisp wine like the the Trial Batch Vermentino. It has a fresh lemon and a grassy note, with added depth of peach and just a touch of honey.
